Corn-Squash Bake

Ingredients

  • 3-4 med zucchini or other summer squash
  • 1 tbs butter
  • 1 tbs oil
  • 1 sm onion
  • 2 c. corn
  • 1 c. shredded cheese
  • 1/2 ½ tsp salt
  • 2 beaten eggs
  • 1/4 ¼ c. dry bread crumbs
  • 2 tbs parmesan cheese
  • 1 tbs melted butter

Preparation

Step 1

Sauté onion in butter and oil. Cook sliced squash and boiling water until tender. Drain and mash with fork. Combine squash, onions, corn, cheese, salt and eggs. Turn into a greased 1 quart casserole. Combine remaining ingredients and sprinkle on top. Bake 40 minutes at 350. degrees or until set. Let stand 5 minutes before serving.
