Curried Carrot Soup

This is a wonderful fragrant soup for a cold winter dinner.

Ingredients

  • 2 cups vegetable broth
  • 1 lb carrots sliced, peeled and sliced into rounds
  • 1 small onion
  • 1 clove garlic, minced
  • 2 tsp ginger root
  • 1 1/2 tsp curry powder
  • 1/2 tsp salt
  • 8 oz soft tofu cut into 1 inch chunks

Preparation

Step 1

Boil over medium heat, the vegetable broth, carrots, onion, garlic and ginger. Cook until the carrots are tender. Cover and reduce heat to low and cook for another 15 to 20 minutes. Stir in curry and salt and simmer for another minute. Add tofu chunks . Puree the mixture and serve.
