Ingredients
- 2 small zucchini (each about 6 inches long)
- 3/4 c. (3 oz.) shredded Parmesan cheese
- 3/4 c. bread crumbs
- 2 eggs well beaten
- vegetable oil
Preparation
Step 1
Cut zucchini into 3 inch x 1/4 inch x 1/4 inch sticks. In food processor or blender, combine Parmesan cheese and bread crumbs; process until well blended. Dip zucchini sticks into beaten eggs, the Parmesan-crumb mixture. In medium skillet, heat 1/2-inch oil; add zucchini and cook over medium heat until golden brown, about 2 minutes. Makes about 32 sticks.
