Butternut Squash Nachos

Ingredients

  • 8 cups tortilla chips
  • 4 cups diced butternut squash
  • 3 cups queso blanco
  • 1/4 cup pepitas
  • sour cream
  • chopped cilantro

Preparation

Step 1

1. Spread chips on rimmed baking sheet or in a shallow dish.

2. Roast butternut squash at 425 deg. for 15 to 20 min.

3. Top tortilla chips with squash, queso blanco and pepitas, then bake at 475 deg. in the upper third of the oven until melted, about 5 min.

4. Top with sour cream and cilantro.
