Roasted Pearl Onions with Balsamic Dijon Glaze

Ingredients

  • 2 lbs white pearl onions
  • 1 c dark brown sugar (not packed)
  • 5 T balsamic vinegar
  • 3 T Dijon mustard
  • 1/4 c butter, diced
  • 1 t salt
  • 1/4 t pepper

Preparation

Step 1

Cook onions in a large pot of salted water for 2 min. Drain. Trim root ends leaving base intact. Peel. Preheat oven to 325. Combine sugar, vinegar and mustard in a bowl. Transfer onions to glass baking dish. Add glaze, butter, salt, pepper and 1/2 c water. Toss and cover with foil. Roast for 25 min. Uncover and roast for 50 min. Continue to roast until deep brown and glazed.
