Cherry Freezer Pie & Filling

Ingredients

  • 4 Cups Cherries - fresh, tart/sour
  • 3 TBSP Tapioca, quick cook
  • 1 Cup Sugar
  • 1/4 Tsp Salt
  • 2 TBSP Lemon Juice

Preparation

Step 1

Line a 8 inch pie pan with foil, let hang over the rim. Add filling. Loosely
cover with foil, freeze until firm (overnite is best) - wrap tightly - remove
from pie tin & return to the freezer.

TO BAKE: Prepare 2 crusts, put crust in bottom of a 9 inch pie pan, put frozen pie filling into the crust (remove foil, obviously) and dot with approx 1 TBSP Butter, put 2nd crust on top of filling, finish as desired.

BAKE: 350' 1 hour or until filling boils with heavy bubbles that do not burst

Can also substitute with Peaches or Pears
