Roasted Butternut Squash with Sage

Ingredients

  • 3 tbsp olive oil
  • 1 1/2 tbsp brown sugar
  • 2 cups cubed butternut squash
  • 2 tsp fresh or dried sage
  • 1 1/2 large onions, chopped
  • 3 cloves garlic, minced
  • salt and pepper to taste

Preparation

Step 1

Preheat oven to 350 degrees.
In a small bowl mix olive oil and brown sugar until blended.
Place cube of butternut squash, garlic and onion in a large bowl.
Drizzle olive oil and brown sugar mixture over the vegetables and gently mix with a spatula.
Pour all contents from large bowl onto baking sheet and place in the oven.
Roast 30 minutes, or until squash is tender.
Transfer to a large bowl, season with sage and toss.
Add salt and pepper to taste.
