Ingredients
- 1/2 c. chopped onion
- 1 tsp. olive oil
- 2 garlic cloves, pressed
- 1 tsp. oregano
- 32 oz chicken broth
- 1 c. water
- 1/3 c. uncooked orzo
- 1/4 tsp ground pepper
- 1 1/2 c. cooked chicken
- 1 t. lemon juice
- feta cheese
Preparation
Step 1
1) heat oil in 3qt. saucepan over md. high heat. add onion, garlic and oregano. cook and stir for 3 minutes. add broth, water and black pepper. bring to boil. stir in orzo; cook stirring occasionally til orzo is tender, about 8 minutes
2) meanwhile, dice chicken. add chicken to broth. return to boil; cook 1 minute. remove from heat; stir in lemon juice. ladle soup into bowls and sprinkle with feta cheese
