Pumpkin Bread **

This is the recipe we make every year. Not sure where I got it.

Ingredients

  • 1 cup sugar
  • 2 eggs
  • 1 cup pumpkin, cooked or canned **
  • 2 cups sifted flour
  • 1/2 tsp. salt
  • 1/2 cup chopped nuts
  • 1/2 cup brown sugar, packed
  • 1/2 cup oil
  • 1 tsp. soda
  • 1/2 tsp. each - ginger, cinnamon, nutmeg
  • 1/4 cup water

Preparation

Step 1

Combine sugars, pumpkin, oil and eggs. Add sifted dry ingredients and mix well. Stir in nuts, water, and 1 cup of raisins, if desired. Spoon into well greased and floured bread tins. Fill pans a little over 1/2 full.
Bake at 350 for 65-75 minutes or until done.

*used all of can - 15 oz.
