easy shrimp pasta for two

Ingredients

  • 2 tbsp. balsamic vinagrette dressing
  • 1/2 lbs uncooked large shrimp, peeled and deveined
  • 1/4 lb fettuccine, uncooked
  • 1 tomato chopped
  • 2 oz cream cheese, cubed
  • 2 tbsp fresh basil, divided
  • 2 tbsp. parmesan cheese

Preparation

Step 1

pour dressing over shrimp in a small bowl. marinate in refrigerator 20 minutes
cook pasta as directed. meanwhile, heat large skillet on medium heat; add shrimp; cook 3 minutes or until shrimp turn pink, stirring frequently. remove shrimp from skillet; cover to keep warm
add tomatoes, cream cheese and 1 tbsp of basil to the same skillet; cook and stir 3 minutes or until well blended. add the shrimp; cook until heat through, stirring occasionally
drain pasta. place ona large platter; top with shrimp mixture, remaining basil and shredded cheese.
