Ingredients
- 1 cup flour
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon baking soda
- 1-1/2 cups light brown sugar
- 1/2 cup butter, softened
- 1 egg
- 1 teaspoon vanilla
- 2 cups old-fashioned oats
- 1/2 cup solid pack pumpkin
- 1 cup dried cranberries (optional)
Preparation
Step 1
Preheat oven to 350 degrees. Line baking sheets with parchment paper. Shift flour, cinnamon, nutmeg & baking soda into a medium bowl. Beat brown sugar and butter in large mixing bowl with electric mixer at medium speed. (5 minutes or until light & fluffy). Beat in egg and vanilla. Add pumpkin; beat at low speed until blended. Add oats; mix well. Stir in cranberries.
Drop by heaping tablespoon about 2 inches apart.
Bake 12 minutes or until golden brown. Cool on cookie sheet 1 minute. Remove and cool completely.
