Curried Scallops

Ingredients

  • 3/4 c. minced carrot
  • 1/2 c. diced celery
  • 1/8 tsp. pepper
  • 1 tsp. reduced calorie margarine
  • 1/2 lb. bay scallops
  • 2 tsp. chablis or other dry white wine
  • 1/4 tsp. curry powder
  • 1/8 tsp. salt

Preparation

Step 1

Coat a med. nonstick skillet w/cooking spray, place over med-high heat until hot. Add next 3 ingredients; saute 1 1/2 min. or until crisp tender. Remove from skillet, set aside and keep warm.
Recoat skillet w/cooking spray; add margarine, place over med-high heat. Add scallops, saute 30 seconds. Add wine, curry powder, and salt. Saute 1 1/2 min. or until scallops are done. Stir in Veggies. Serve over orzo.
