Quinta’s Coconut Streusel Coffee Cake

Ingredients

  • Coffee cake:
  • 1 ½ cups flour
  • ¾ cup sugar
  • ¾ tsp. baking powder
  • ¼ tsp. baking soda
  • ½ tsp. salt
  • ½ cup firm butter, cut into pieces
  • 2/3 cup buttermilk
  • 1 egg
  • 1 tsp. vanilla
  • Streusel:
  • ¼ cup flour
  • ¼ cup brown sugar
  • 2 Tbs. softened butter
  • 1/3 cup flake coconut
  • ¼ cup chopped pecans

Preparation

Step 1

Heat oven to 350º. Grease bottom only of an 8” square pan with shortening or cooking spray. In a large bowl, stir in dry ingredients for cake until mixed. Cut in ½ cup butter, using a pastry blender until mixture is crumbly. Add buttermilk, eggs and vanilla. Beat with an electric mixer on medium speed for 1 minute. Spread in pan. In small bowl, mix streusel ingredients except coconut and pecans with fork until mixture is crumbly. Stir in coconut and pecans. Sprinkle over batter. Bake for 35 – 45 minutes or until toothpick comes out clean. Cool 30 minutes, serve warm.
