Mushroom Barley Soup

Ingredients

  • ½ cup raw pearled barley
  • 6 ½ cup chicken /beef stock
  • ½ tsp salt
  • 3 -4 T soy sauce
  • 3 - 4 T dry sherry
  • 3 T butter
  • 2 cloves minced garlic
  • 1 heaping cup chopped onion
  • 1 lb fresh, sliced mushrooms
  • Pepper

Preparation

Step 1

Cook barley in 1 ½ cups water till tender. Add remaining stock, sherry, and soy sauce

Saute onions and garlic in butter. Add mushrooms and salt. When tender, add to barley

Give it a generous grinding of pepper and simmer 20 min. covered, over lowest heat
