Mushroom Barley Soup

Ingredients
- ½ cup raw pearled barley
- 6 ½ cup chicken /beef stock
- ½ tsp salt
- 3 -4 T soy sauce
- 3 - 4 T dry sherry
- 3 T butter
- 2 cloves minced garlic
- 1 heaping cup chopped onion
- 1 lb fresh, sliced mushrooms
- Pepper
Details
Servings 6
Preparation
Step 1
Cook barley in 1 ½ cups water till tender. Add remaining stock, sherry, and soy sauce
Saute onions and garlic in butter. Add mushrooms and salt. When tender, add to barley
Give it a generous grinding of pepper and simmer 20 min. covered, over lowest heat
