Pumpkin Cheesecake Bars

Great for Thanksgiving dessert. Easy enough to make on the morning of Thanksgiving.

Ingredients

  • FILLING:
  • 2 cups graham crackers crumbs
  • 1/4 cup sugar
  • 1/4 cup butter, melted
  • 2 pkg. (8oz) cream cheese
  • 1 pkg. (8oz) cream chese
  • 3/4 cup sugar
  • 1 can (15oz) solid-pack pumpkin
  • 2 T. flour
  • 3/4 t. pumpkin pie spice
  • 3/4 t. vanilla extract
  • 2 eggs, slightly beaten
  • 20 walnut halves

Preparation

Step 1

In a small bowl, combine cracker crumbs and sugar; stir in butter. Press onto the bottom of a 13in x 9in baking dish coated with cooking spray. Cover and refrigerate for at least 15 minutes.
In large bowl, beat cream cheeses and sugar unitl smooth. Beat in the pumpkin, flour, pie spice and vanilla. Add eggs; beat on low speed just until combined. Pour over crust.
Bake at 325 degrees for 35-45 minutes or until center is almost set
