  • 1/2 cup unsalted shelled pistachios finelly chopped
  • 4 tsp dijon mustard
  • 2 tsp orange zest
  • 1 tbs orange juice
  • 1/4 tsp kosher SALT
  • 1/2 tsp Black pepper
  • 4 of 6oz salmon fillet
  • 2 tbs olive oil
  • orange wedges

Preparation

Step 1

preheat oven 375, coat a rimmed baking sheet with cokking spray. Place pistachios in a shalow dish
in a small bowl, stir together mustard, orange zest, orange juice, SALT and pepper . brush mixure into flesh side of salmon and press it into pistachios. Place salmon on baking sheet and bake until cooked through, about 10
