BACON SPINACH QUICHE

  • 1 9" frozen pie shell
  • 4 eggs
  • 1/2 C grated swiss cheese
  • 1/2 C onions
  • 1/2 C whipping cream
  • 1 pinch nutmeg
  • 1 C fresh mushrooms
  • 1/2 t salt
  • 1/4 t pepper
  • 10 oz chopped spinach
  • parmesan cheese

Preparation

Step 1

Cook and drain spinach, set aside. Saute onions and add mushrooms until soft, set aside. Fry bacon, grate cheese. Wisk eggs, cream, spices until frothy. Place cheese and bacon in bottom of pie shell. Add spinach to frying pan mixture and saute for one minute. Sprinkle mixture with flour. Take saute mixture and add over cheese. Pour egg and cream over spinach. Sprinkle with parmesan cheese. Cook on center rack at 375 degrees 25-30 minutes.
