Pumpkin Soup

Ingredients

  • 2 T butter
  • 2 T minced onion
  • 1 T flour
  • 1 cup chicken broth
  • 1 cup pumpkin puree
  • 1 cup milk
  • 1 cup light cream (or 1 can evaporated milk and 1 can water)
  • ¼ tsp marjoram or basil
  • ½ tsp salt
  • ¼ tsp pepper

Preparation

Step 1

In large saucepan, sauté onion in butter. Add flour and slowly stir in chicken broth. Heat and stir until slightly thickened

Add pumpkin, milk, cream and seasonings. Simmer on low about 15 minutes
