Zucchini Parmesan Crisps

Ingredients

  • cooking spray
  • 1 lb zucchini
  • 1 TBSP olive oil
  • 1/4 c freshly grated Parmesan cheese
  • 1/4 c plain dry bread crumbs
  • 1/8 tsp salt
  • pepper

Preparation

Step 1

1. Preheat oven to 450 degrees and coat a baking sheet with cooking spray.

2. Slice zucchini into 1/4 in thick rounds.

3. Combine Parmesan, bread crumbs, salt and a few turns of pepper in a small bowl.

4. Dip zucchini in olive oil and then into the Parmesan mixture (coating both sides).

5. Place in a single layer on a baking sheet.

6. Bake the zucchini rounds until browned and crisp (25-30 minutes). Serve immediately (or it will get soggy).
