Black Beans and Rice II

Ingredients

  • 1 (12 oz) pkg black beans
  • 7 cups water
  • 8 cloves garlic, minced
  • 2 onions, chopped
  • 2 green peppers, chopped
  • 1/3 cup olive oil
  • Ham bone
  • 4 tsp salt
  • 1 tsp black pepper
  • 3 tbs vinegar
  • 1/2 cup chopped onion and scallions

Preparation

Step 1

Soak beans overnight in water to cover. Drain beans. Combine black beans with next 8 ingredients in a soup pot. Simmer for 3 to 4 hours or until beans are tender and liquid is tick. Add vinegar just before serving. Serve over rice and garnish with chopped onion.

Serves 8.
