Fried Green Tomatoes

Evelyn Kostiuk made these one time when I stayed there. This was the first time I had tasted them. Awesome!!

Ingredients

  • 2 to 3 green tomatoes
  • sea salt
  • 3 1/2 t cajun season blend(or any you enjoy)
  • 3/4 c flour
  • 2 eggs
  • 2 t cream or 1/2 and 1/2
  • 1&1/2 c bread crumbs
  • 3/4 c parmesin cheese
  • 3/4 c vegetable oil

Preparation

Step 1

Tomato Plate:
slice 1/4 in thick, pat dry, sprinkle with salt.

Flour Plate:
mix flour, cajun spices

Egg plate:
Beat eggs with cream and pinch of cajun

Breadcrumb Plate:
Mix breadcrumbs and cheese.

Prepare tomatoes by:
Dredge each tomato slice in flour - egg - breadcrumbs and rest on plate.
Fry till golden and crispy on each side. 1 minute per side. Remove and let oil soak out on paper towel.
