Ingredients
- 1 cup orzo pasta
- 5 slices bacon, chopped
- 1/2 onion, chopped
- 2 cups mushrooms, roughly chopped
- 1 cup frozen peas, thawed
- 2 cloves garlic, minced
- 2 tbsp butter
- 2 tbsp flour
- 2 cups chicken broth
- Salt/pepper
Preparation
Step 1
Cook orzo in a pot of boiling water for 8 minutes. Drain.
In a large skillet over medium heat, cook the chopped bacon until done. Remove from the skillet and reserve. In the bacon grease, cook the onion, mushrooms and peas until tender. Add the garlic and cook 1-2 minutes longer. Season with salt and pepper to taste.
In a sauce pan, melt the butter over medium-high heat. Add the flour and whisk until the flour and butter are combined and the flour is cooked down, 1-2 minutes. Add the chicken broth and slowly boil for 3-4 minutes, whisking constantly until thickened. Season with salt and pepper to taste.
Combine the orzo, sauce and vegetables and toss to combine. Serve immediately.
