Ingredients
- 1 can(approx. 15 oz.) black beans rinsed,drained and divided
- 3 cloves garlic,chopped
- 1/4 cup corn
- 1/4 cup red peppers,chopped
- 1/4 cup vidalia onions,chopped
- 1/4 cup medium salsa
- 1/4 cup fine cornmeal
- 1 tsp cumin
- 1 tsp cilantro
- 1 tsp hot sauce(optional)
- 1 sandwich thin toasted(or any variety)
Preparation
Step 1
Spray a saute pan thoroughly. Add in onions and garlic and saute over medium heat,add in red peppers and corn. Continue to saute until garlic becomes fragrant and onions are translucent,remove from heat and set aside.
Meanwhile,drain and rinse beans and divide them in 1/2. Set 1/2 of them aside in a large mixing bowl. Add the first half of the beans to the cooked vegetables. Mix all together,pour into a blender,pulse for 1-2 min. or until all ingredients have coarsely been pureed and the consistency is creamy.
Add this mixture to the whole black beans in the bowl. Add the salsa,cornmeal,cumin,cilantro and hot sauce, thoroughly mix all ingred together.
Place this mixture in refrigerator for 2-5 hrs.(this will firm it up to make it easier to form burgers(
Preheat oven to 350. Form 4 patties about 4-6" wide with your hands.
Place on greased baking sheet and bake for 30 min.(15 min per side or until golden brown)
Five min. prior to removing the burgers from the oven place bread in oven to toast. Let burgers cool for 3-5 min.
