Ingredients
- 2 Tbsp olive oil
- 1/2 il sliced fresh mushrooms
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 can (14 1/2 oz) chicken broth
- 1 cup uncooked orzo pasta
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 Tbsp minced fresh parsley
Preparation
Step 1
Heat oil in a large saucepan
Saute mushrooms and onion in oil until tender
Add garlic, cook and stir 1 min longer
Add the broth, orzo, salt and pepper
Bring to a boil
Reduce heat, cover and simmer for 10-14 mins or until pasta is tender
Stir in parsley
