Lemon Butter Confectionary Cookies

I've tried these substituting lime for the lemon, okay but the lemon is the best.

Ingredients

  • 2 sticks of butter
  • 2/3 c conf. sugar
  • 1 egg yolk
  • 1 1/4 t lemon extract
  • 1/4 t vanilla
  • 2 c flour
  • zest of one lemon
  • 375' oven

Preparation

Step 1

Beat butter on medium speed til fluffy.
Add sugar and egg yolk. Beat again til fluffy.
Add extracts.
Gradually mix in the flour.

Using a small scoop, scoop onto a greased or parchment lined sheet pan.

When cooled drizzle with a mixture of conf. sugar and lemon juice.

These can also just be sprinkled with the conf. sugar.
