Pork Chops Barbecued

Ingredients

  • 2 TSP VEGETABLE OIL
  • 1 LARGE YELLOW ONION, FINELY CHOPPED
  • 1 CUP KETCHUP
  • ½ C TOMATO PASTE
  • 1/3 C ORANGE MARMALADE
  • 1/3 C WATER
  • 1/3 C CIDER VINEGAR
  • 3 TB WORCESTERSHIRE SAUCE
  • 1/8 TSP CAYENNE PEPPER, OR TO TASTE
  • 8 BONELESS CENTER CUT LOIN PORK CHOPS ABOUT ½ INCH THICK

Preparation

Step 1

In a large saucepan heat oil over medium-high heat until hot but not smoking. Add onion; cook until tender, about 5 minutes. Stir in ketchup, tomato paste, marmalade, water, cider vinegar, Worcestershire sauce, and cayenne. Simmer sauce, stirring occasionally, until it thickens, about 25 – 30 minutes.

While sauce is simmering, preheat oven to 350. Spray a baking sheet with vegetable cooking spray. Reserve half of sauce for basting. Brush remaining sauce on pork chops, coating each piece well.

Place pork on prepared baking sheet. Bake pork, basting twice with reserved sauce, until it is cooked through, about 45 minutes. Serve immediately.

These pork chops can easily be turned into a BBQ sandwich. Simply shred cooked pork and serve on a bun. You may want to save a bit of sauce to coat your shredded pork.
