Muffins Cinnamon Apple Flax

Ingredients

  • 1 ½ c whole wheat pastry flour
  • ¾ c flax seed meal
  • ¾ c oat bran
  • ½ c honey
  • 2 TB molasses
  • 2 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 tsp cinnamon
  • 1 ½ c grated carrots
  • 3 apples peeled and grated
  • 1 ½ c raisins, fresh blueberries, or craisins
  • 1 c chopped walnuts, pecans, or almonds
  • ½ c buttermilk
  • 2 eggs beaten
  • 1 tsp vanilla

Preparation

Step 1

Mix all dry ingredients together and set aside. Mix all wet ingredients. Combine together. Spray muffin tin with nonstick cooking spray; do not use muffin papers. Bake 20 minutes at 350. Keep refrigerated; they will keep for two weeks.
