three cheese quesadillas with garlic butter

Ingredients

  • 2 small cloves of garlic
  • 2 tbsp. salted butter at room temp
  • 8 oz monterey jack cheese, coarsely grated, 2 cups
  • 1 1/4 oz finely grated parmesan - 1/2 cup
  • 4 oz. fresh goat cheese, crumbled- 3/4 cup
  • 4 9-10 inch flour tortillas

Preparation

Step 1

position oven rak in the center of the oven, heat oven to 200
in a small pot, bring 2 cups water to a boil over high heat. add the garlic and cook until soft, about 5 minutes. drain the garlic, let cool slightly, peel, and put in a small bowl.. with a fork mash the garlic to a soarse paste and tthen add the butter and mix well
in a medium bowl, combine the jack cheese, parmesan and goat cheeses. spread garlic butter on one side of each tortilla and set tortillas on a wokr surface, buttered side down. distribute cheese mixture among tortillas, covering only half of each and leaving an inch margin at the edge. fold the tortillas in half to enclose the filling, creating a half moon.
in a 10-12 inch non stick skillet over mediuk heat, cook 2 of the quesadillas, covered until golden brown, about 4 minutes. uncover and flip the quesadillas. cook until the second side is golden brown and cheese has melted cmpletely. about 2 minutes. transfer the quesadillas to the oven to keep warm and repeat with the 2 remaining quesadillas. you can hold the quesadillas in the warm oven for 30 minutes. serve
