Black Bean Chowder

Ingredients

  • 1 chopped onion
  • 1 chopped red pepper
  • 2 minced garlic cloves
  • 2 1/2 qt chicken broth
  • 1/4 c. brown rice
  • 2 med potatoes, peeled and cubed
  • 1 tbs olive oil
  • 1 15oz can black beans
  • 1 16oz white beans of choice
  • 1 8oz can tomato sauce
  • 1 1/2 c. frozen or fresh corn
  • 1 bay leaf
  • 1 tsp cumin
  • 1 tsp chili powder
  • Shredded cheddar cheese
  • Fresh cilantro

Preparation

Step 1

Sauté the vegetables in oil and add to crock pot. Add remaining ingredients except cheese and cilantro. Cook on low for 6-8 hours. Remove bay leaf. Serve with cheese and cilantro garnish and a slice of favorite bread.
