Ingredients
- 16 -1 " Cubes Seedless Watermelon, chilled
- 2 oz. Feta Cheese, crumbled
- 2 Tbsp. Fresh Mint, finely chopped
- 2 tsp. Shallots, finely chopped
- Freshly Ground Black Pepper
Preparation
Step 1
Using a small melon ballerina or a 1/4 tsp. measuring spoon, scoop out a small well in each of the watermelon cubes, keeping the walls of the cube intact.
In a small bowl, mash together the feta, mint & shallots; season with pepper. Stuff the wells of the watermelon cubes with the feta mixture. Refrigerate till served.
