Banana Nut Bread

Ingredients

  • 1 3/4 cups plain flour
  • 2/3 cups sugar
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. baking soda
  • 1/2 cup butter
  • 2 ripe bananas
  • 2 eggs, slightly beaten
  • 1/2 cup chopped nuts

Preparation

Step 1

Preheat oven to 350 degrees. Grease 9 x 5 loaf pan. Mix first 5 ingredients. With pastry blender, cut in butter. Stir in bananas, eggs and nuts. Bake for 55 minutes to 1 hour.

Cranberry Nut Bread:
Substitute 1 can of whole berry cranberries for bananas.

Pumpkin Bread:
Substitute 1 can pumpkin puree for bananas and added 1 tsp. cinnamon, ½ tsp. ginger and ½ tsp ground cloves. Or 2 tsp. pumpkin or apple pie spice.
