- 1 cup cooked quinoa
- 1 cup black beans, rinsed and drained
- 1 chopped tomato
- 1 clove minced garlic
- 3 tbsp. lime juice
- 4 tsp. olive oil
- 1/2 tsp. cumin
- 1 tsp. each salt & pepper
- 1/2 tsp. chopped fresh parsley
