Quinoa with black beans and tomatoes

Ingredients

  • 1 cup cooked quinoa
  • 1 cup black beans, rinsed and drained
  • 1 chopped tomato
  • 1 clove minced garlic
  • 3 tbsp. lime juice
  • 4 tsp. olive oil
  • 1/2 tsp. cumin
  • 1 tsp. each salt & pepper
  • 1/2 tsp. chopped fresh parsley
