Banana Bread

Ingredients

  • 2/3 cups sugar
  • 1/3 cup butter or marg
  • 3/4 tsp grated lemon rind
  • 1 3/4 cup sifted flour
  • 1 egg, beaten
  • 1/4 tsp soda
  • 2 tsp baking powder
  • 1 cup banana pulp (2 or 3 ripe bananas)

Preparation

Step 1

1. Preheat oven to 350˚
2. Blend sugar, butter and lemon rind together until light and creamy
3. Beat in the egg
4. Sift together the flour, baking poweder and soda
5. Alternately add the sifted ingredients to the sugar mixture with the banana pulp, beating after each addition until smooth
6. Place in a greased 8 by 4 inch loaf pan and bake for about an hour or until done
