Ingredients
- Salad:
- 2 cups sweet corn kernels
- 1 avocado (pitted, peeled and cut into bite sized pieces)
- 1 cup tomatoes (cut into bite sized pieces)
- 1 cup black beans
- 2 green onions (sliced)
- 1 handful cilantro (chopped)
- 4 slices bacon (chopped and cooked)
- creamy salsa verde dressing
- Dressing:
- 1/2 cup salsa verde
- 1/2 cup buttermilk
- 1/2 cup mayonnaise
- 1 clove garlic
- 1 teaspoon sugar
- 1 lime (juice)
- 1/4 cup cilantro
Preparation
Step 1
Assemble the salad.
Puree everything for the dressing in a blender or food processor. Toss with salad and serve.
