Ingredients
- 2 c frozen shelled edamamee
- 1 1/2 c corn kernels
- 1 1/2 c mango cubes
- 1 c chopped tomato
- 1/2 c chopped red onion
- 2 T cilantro
- 1 T olive oil
- 1 T lime juice
- 1/4 t salt
- 3/4 t pepper
Preparation
Step 1
Prepare edamame per package directions. Drain and rinse under cold dater.
Transfer to large bowl. Stir in corn, mango, tomato, onion, cilantro, oil, lime juice, salt and pepper. Toss well.
