Corn, Mango, and Edamame Salad

Ingredients

  • 2 c frozen shelled edamamee
  • 1 1/2 c corn kernels
  • 1 1/2 c mango cubes
  • 1 c chopped tomato
  • 1/2 c chopped red onion
  • 2 T cilantro
  • 1 T olive oil
  • 1 T lime juice
  • 1/4 t salt
  • 3/4 t pepper

Preparation

Step 1

Prepare edamame per package directions. Drain and rinse under cold dater.

Transfer to large bowl. Stir in corn, mango, tomato, onion, cilantro, oil, lime juice, salt and pepper. Toss well.
