Ingredients
- 1/2 bag lentils
- 1-1 1/2 lbs. sweet or hot sausage
- 3 cups chicken broth
- 1 cup white wine
- Water to cover lentils
- 1/4 cup olive oil
- 1 small onion
- 2-3 cloves garlic finely chopped
- salt and pepper to taste
- Italian seasoning, oregano and parsley to taste
- I-12 oz Orecchiette pasta
- Parmesan Cheese
Preparation
Step 1
Place lentils in a 4 quart saucepan and add water to cover lentils. Then add white wine wine and bring to boil. Then add salt, pepper, Italian seasoning, oregano and parsley. Lower heat to simmer stirring occasionally and cook about 45 minutes to 1 hour until lentils are tender.
Slice sausage into rings. In a saucepan heat oil and saute onion and garlic. Add sausage and saute for approximately 10 minutes. Add chicken broth and bring to a boil. Lower heat to medium and simmer for 30 minutes. Stir occasionally. Remove sausage from broth and set broth aside.
Meanwhile, cook pasta in large pot of boiling salted water until pasta is al dente.
When lentils are done place in bowl and add pasta and sausage. Add approximately 1 cup reserved broth to moisten.
Sprinkle with parmesan cheese.
