Chickpea Soup

Ingredients

  • 2 cups chickpeas
  • 2 cups canned tomatoes
  • 1 lg.onion,chopped
  • 1 stalk celery,minced
  • 2 carrots,sliced
  • 4 garlic cloves,minced
  • 1 red pepper,diced
  • 4 tbsp olive oil
  • 1 bouillon cube
  • 1 bay leaf
  • salt and pepper to taste

Preparation

Step 1

Soak chickpeas overnight.Cover with water and bring to boil.Add all remaining ingredients and cook slowly over medium heat for about 1 hour,until the chickpeas and vegetables are tender.Adjust seasoning.Cover and simmer the soup for about 15 min.Remove the bay leaf.
Serve hot.
