Pumpkin Snickerdoodles

Ingredients

  • 1 1/2 cups Sugar
  • 1/2 cup Butter
  • 1/2 cup Shortening
  • 2 Eggs
  • 2 3/4 cups Flour
  • 2 tsp Cream of Tartar
  • 1 tsp Baking Soda
  • 1/4 tsp Salt
  • 1/2 tsp Pumpkin Pie Spice
  • 1/2 Cup Pumpkin Puree
  • 1 tsp Vanilla
  • 1/4 cup Sugar
  • 2 tsp Ground Cinnamon

Preparation

Step 1

Preheat oven to 400 degrees Fahrenheit.
Whisk together 1 1/2 cups of sugar, butter, shortening, and eggs. Stir in flour, cream of tartar, baking soda, salt, pumpkin pie spice, pumpkin puree, and vanilla until well blended.
Prepare a bowl containing 1/4 cup of Sugar and Ground Cinnamon.
Roll your cookies into 1" - 1 1/2" sized balls and roll the dough balls into the cinnamon and sugar mixture.
Place on cookie sheet.
Bake for 10 minutes.
