Pineapple Pecan Cake

Ingredients

  • Cake:
  • No shortening!!!
  • 2 eggs
  • 1 1/2 cups sugar
  • 2 cups flour
  • 2 tsp soda
  • dash of salt
  • 1 #2 can crushed pineapple, juice and all
  • 1/2 cup chopped pecans
  • Icing:
  • 1 8oz pkg cream cheese
  • 1/2 stick margarine
  • 1 3/4 cups powdered sugar
  • 1 tsp vanilla
  • 1/2 cup chopped pecans

Preparation

Step 1

Cream together; eggs, sugar.

Add: flour, soda, salt, pineapple and 1/2 c chopped pecans.

Pour into greased and floured 9x13 baking pan. Bake at 350 for 35 minutes or until done.

Cool completely.

Icing:

Cream ingredients together except pecans.

Add pecans.

Spread on cake, it will not be too thick.
