Ingredients
- 1/3 cup white balsamic vinegar
- 1 garlic clove minced
- 2 tbsp brown sugar
- 2 tbsp olive oil
- 1/8 tsp salt
- 1 large peeled and diced fresh peach
- 2 tbsp chopped fresh basil
- 2 lbs heirloom tomatoes
- 3 oz. goat cheese
- 1/2 cup chopped toasted pecans
- fresh ground pepper
Preparation
Step 1
Whisk together 1;3 cup white balsamic vinegar; 1 garlic clove, minced; 2 Tbsp. brown sugar; 2 Tbsp. olive oil;
and 1/8 tsp. salt. Stir in 1 large peeled and diced fresh peach and 2 Tbsp. chopped fresh basil. Spoon over sliced
heirloom tomatoes (about 2Ib.); top with 3 oz. crumbled goat cheese and 1/2 cup coarsely chopped toasted
pecans. Sprinkle with freshly ground pepper to taste.
