Ingredients
- 8 oz can crushed pineapple in juice
- 3 cups flour
- 2 cups sugar
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 2 tsp cinnamon
- 2 lg eggs
- 1 egg white
- 1/2 cup safflower oil
- 2 tsp vanilla
- 2 cups coarsely shredded carrots
- 1/2 cup applesauce
Preparation
Step 1
Heat oven to 350. Drain pineapple and reserve juice. In large bowl, whisk tog flour, sugar, bak soda, bak powder, salt & cinnamon. Make well in center, drop in eggs, egg white, oil, vanilla & pineapple juice. Beat at med speed until blended, 1 1/2 min. With spoon, stir in pineapple, carrots and applesauce. Spoon batter into baking cups in muffin tins. Bake until toothpick comes out clean, about 22 min. Cool on wire rack...
