Green Chili Corn Casserole

Ingredients

  • Preheat oven to 400 degrees
  • Saute 1 chopped onion, 1 chopped green pepper and 1 cup chopped celery.
  • Beat 2 eggs.
  • Add 1 can cream style corn and 1 can niblets.
  • Do not drain.
  • Stir in 1 pkg. cornbread mix
  • Place corn mixture in 9 x 13 pan. Place a layer of the sauteed veggies on the corn. Nex layer 1 cup sour cream, 1 can green chillies and 1 cup grated cheddar cheese.
  • Bake for 30-35 min.
