Coconut Fingers

Ingredients

  • ¼ cup almonds, finely chopped
  • 1 cup sifted flour
  • 1 tsp. baking powder
  • ¼ tsp. salt
  • 1 egg
  • ½ cup sugar
  • ½ cup butter, softened
  • ¼ tsp. vanilla
  • ¼ tsp. almond extract
  • ¼ cup shredded coconut
  • 1 cup icing sugar

Preparation

Step 1

Preheat oven to 350 degrees. Cream butter and sugar, beat in egg and extracts. Sift together the flour, baking powder and salt. Mix well and add the flour mix to the butter mix. Fold in the almonds and coconut. Chill dough 1 hour. Roll dough into ½ inch rolls and cut into 1 ½ inch lengths. Bake 18 – 20 minutes. Dip into icing sugar and cool.
