Mashed Caramel Sweet Potatoes

  • 3 sweet potatoes
  • 4 Tbsp. unsalted butter
  • 1 bunch sage
  • 1/2 cup caramel sauce
  • 6 Tbsp. heavy cream
  • salt

Preparation

Step 1

Preheat oven to 350. Prick the sweet potatoes with a forl and bake for one hour or until tender. Halve lengthwise and scoop out the flesh.

In a small skillet, melt the butter over medium heat. Fry the sage leaves, turning occasionally, until crisp, but not browned, 3 minutes. Drain on paper towels.

In a medium saucepan, combine the caramel sauce and cream. Stir in the potatoes until smooth season with a pinch of salt. Top with sage leaves for service.
