Ingredients
- 1 cup fresh corn kernels
- 2/3 cup goat cheese, softened
- 8 corn tortillas
- 1/4 cup chopped green onions
- Salsa
- cooking spray
Preparation
Step 1
Cook corn for two minutes. Place corn in bowl and add goat cheese, stir until well blended. Divide corn mixture evenly among 4 tortillas; spread. Sprinkle each with green onions and drizzle with salsa. Top with remaining tortillas.
Pan fry quesadilla.
