Ingredients
- New Mexican chile
- 2 Tbsp. vegetable oil
- 1/2 tsp. mustard seed
- 1 cup finely chopped onion
- 2 tsp. minced garlic
- 1 tsp. cumin
- 1 tsp. coriander
- Salt
- 1 tsp. fresh ginger
- 1/2 tsp. turmeric
- 1 pound potatoes, cut 1/2" pieces
- 1/2 cup water
- 8 ounces green beans
- 1/4 cup cilantro
Preparation
Step 1
Grind chile. Heat oil in skillet over medium-high heat. Add mustard seed, saute 30 seconds. Add onion, saute until lightly browned. Stir in chile, garlic, cumin, coriander, ginger, turmeric and cook 30 seconds.
Stir in potatoes, cook 2-3 minutes. Add 1/2 cup water and salt. Bring to boil. Reduce heat and simmer 8 minutes. Add beans, cover and cook 5 minutes or until beans are tender. Stir in cilantro.
