Snacks, Healthy: Baked Sweet Potato Chips

Ingredients

  • 1 large sweet potato, washed and dried (keep the skin on for even more of a nutritional punch!)
  • neutral-flavored vegetable oil
  • Kosher salt

Preparation

Step 1

preheat oven to 400°F.
using a mandolin or very sharp knife, carefully slice sweet potato into 1/8 inch slices. lightly coat with oil and sprinkle with salt.
lay sweet potato slices in an even layer on two baking sheets, making sure they don't overlap.
bake for about 20-22 minutes, or until lightly golden brown and crisp around the edges, flipping once. Watch closely, as the chips will go from crispy to burnt in a matter of minutes!
let cool.
