Turkey Meatball Subs

Ingredients

  • meatballs:
  • 4 sub buns
  • Shredded cheese
  • 1 egg
  • 1/2 cup grated onion
  • 2 cloves garlic, minced
  • 2 tbsp dry bread crumbs
  • 2 tbsp Parmesan
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 lb lean ground turkey
  • Sauce:
  • 1 tbsp oil
  • 1 onion, chopped
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 28 oz can ground tomatoes

Preparation

Step 1

Meatballs. In large bowl, beat egg. Add rest of ingredients and shape into 16 meatballs. Bake on cookie sheet in 400 F oven until firm (about 15 minutes) Transfer to slow cooker.

In skillet heat oil over medium. Fry onion, basil, oregano, salt and pepper about 5 minutes. Scrape into slow cooker along with tomatoes. Stir gently to combine.

Cover and cook on low until bubbly, about 4 hours (high-2 hours)

Divide meat and sauce over buns. Add cheese and broil until melted.
