Asparagus and Sundried Tomato Vinaigrette

Ingredients

  • 2 pound fresh asparagus, cleaned and stemmed
  • 1/3 cup sun dried tomato pieces chopped
  • 1/4 cup bbalsamic vinegar
  • 1 Tablespoon olive oil
  • 1/4 teaspoon salt
  • 1 clove garlic, minced

Preparation

Step 1

Steam aspargus, covered 8 minutes. Place in a shallow dish.

Combine sundried tomatoes and remaining ingredients in a bowl. Soon evenly over aspargus.

Cover and chill 2 hours.
